I woke up today at 530am and....
Prepared breakfast for the hubby... cereals from Kashi - Go Lean Crunch! with fresh blueberries and protein milk from Lucky's Market
Started preparing for the hubby's lunch meal...Pan Fried Chicken with Boiled Eggs
Ingredients for Pan Fried Chicken:
Chicken Thighs - 2 pieces
Salt
Pepper
Garlic Powder
Extra Virgin Olive Oil
Baby Spinach
Instructions:
- Prepare the chicken thighs - (defrosted it over night on the fridge and it is good to go for the morning).
- Combine the salt, pepper, and garlic powder together for the flavoring of the chicken thighs. Easy!
- Prepare a pan with EVOO and heat it up.
- When the pan is hot enough, put the chicken thighs on the hot pan and start frying on one side for 7.5 minutes and the other side for 7.5 minutes.
- Prepare a plate with a paper towel on it and put the cooked chicken thighs.
Ingredients for Boiled Eggs:
Eggs (Organic) - 3
Water
Instructions:
- Prepare a pot of water
- Put eggs on the pot
- Boil for 13-15 minutes with medium heat
Here is the finish product ... I added a little brown rice, ketchup on the side and a protein lemon snack.The hubby's lunch...cooked for 15 minutes only! How easy was that? You can try this at home too.
** Just in case you are wondering, whenever I cook meals, I tend not to measure the ingredients, instead I go with my gut feel and taste buds. So, you are not going to see it here. Not unless if I am baking because measurements are needed.
